In planning out dishes for the week, my priorities became clear: eat the most filling foods for the cheapest amount of money.
We got a dozen eggs for around 2 dollars. That's a lot of bang for your buck! You could make a 3 egg omelet for breakfast lunch and dinner and still not use the whole package.
The other cost-effective ingredients making an appearance in my food plan this week are cheap meats and raw grains like oats and rice. Oh, and dry beans like lentils.
You notice there aren't a lot of vegetables in my list.
Sure, vegetables are expensive. But the main reason they don't appear very much in my diet this week is that I don't feel full after eating them. This $31.50 has to be very precise in terms of what will keep me going the longest for the cheapest.
Sorry, fruits and vegetables. I love you dearly. But you desert me too quickly. This week, I'll stick with eggs who are in for the long haul.
